Does anyone have a suggestion where I could get my hands on some lunch bags for children?
Also, I'm ordering the slimline clamping system and I'm going to start out with only one window. Any suggestions on which size would be the most versatile to start with?

See if you can get a discount for multiple windows with the frame purchase-might save you some money.
We have the 3 x 5 (approximate) and the 6 x 5. I know the actual dimensions are different but that's close enough. Several times we wish we had the next larger one but I think that means a bigger 'frame' to hold it. We do totes, above pockets on polos and denim shirts, knit ski hats, christmas stockings, things like that with no problem.
For the lunch bags-all kinds of suppliers out there-you need to narrow it down. Canvas, poplin, insulated (nylon or poly), fold down with snaps, velcro, etc.etc.etc....there are many options!
