Center out

Completely new to embroidery. Bought an brand new XTS to expand my growing t-shirt business. Apparently I have forgotten everything I learned in my on-site training. Where can I find the center-out sewing setting? I'm trying to practice doing caps and I keep messing them up. Also, someone mentioned turning off the bobbin break sensor? Where might I find that? Using Pro+ and OS 10.

In DS in Lettering Properties <l> only works for lettering tho.....
