when digitizing a script font for hats, can one still make it sew from the center out as recommended for cap sew outs? Is there a special trick to this?

If you are using the type in Design Shop, under your 'typing window' is a set of arrows, select the <-> (one that looks like this or close to it) and it will do it automatically.
If you are making a custom 'logo' that is a script but not a font, then after you get all your 'letters' done (they are actually artwork, not in a font) and in the stitch tree (list) move them up or down to get the center-out line up.
Make sense?

Script fonts on caps are a bit problematic. When you make them sew backwards the letters no longer have their tails under the letter that follows. You may need to tweak the tails to get them to fit properley. Also pay attention to your entry/exit points.Herb<br />Royal Embroidery

Got it, thanks. I knew the "tails" didn't work quite right if just left alone, so will do what you suggested Herb. Thanks for your suggestion as well Rod, I have used those sew out direction keys on normal fonts, and they work quite nicely most of the time.
