If I remember right for a french knot a person wraps the thread around the needle then goes down the center of the loop, correct? I dont think that it can be done with the speed of the Amaya...Good Luck!
I suppose you could digitize a tiny circle, crossing over itself many times for underlay, and then crossing over a bit bigger, many times, to build up the knot.

Someone was asking about French knots a few days ago. I was just browsing and found this site with an alpha that is called french knot. It says it is like candlewicking. I don't know how to do candlewicking but maybe someone in the group does or I bet you could contact her and she could help you out.
